coconut ice

100 g condensed milk, 100g icing sugar, almost 100 g of coconut

choc fudge

melt 200g chocolate with 200g of condensed milk , add about 12 grams butter and 100g of icing sugar
can also add extra cocoa, sesame seeds, peppermint etc

monday
squid, carrot onion stir fry, steam brocc with a sauce we made up= garlic fried in sesame and olive oil, with other seasonings

tuesday
cold rice noodles, veggies, peanuts, cold chopped pork, a sauce made from lime juice and what i thought was sweet chilliw sauce, but we also put other sauces on the table , would have used basil, mint etc if we had it, and more veggies

 With one Khmer, one Aussie and a fussy toddler its hard to find a meal we can all eat together but this worked! We all ate together and enjoyed it. Fried rice with bacon and whatever veg we had.

Cooking and eating with one hand

Since i got back from aus ive started buying packets of mixed frozen veg from the supermarket. Its a quick and easy way to make a meal with veg. The whole going to the market (as opposed to the supermarket) and chopping thing is harder with toddler and newborn. Ive been cooking meals i can eat with one hand, mostly involving the said veg with garlic onions meat and various seasoning. This one pictured is chicken and curry powder. Quick easy healthy and freezable.

Toddler lunch

Last few weeks ive been packing peanut butter sandwichs and cucumber in the toddlers box. Same lunch everyday and i pack it in the morning at breakfast whether we are going out or not . He often has fruit and milk as well. Its easy, fairly healthy and he eats it. Im usually tired and hungry by lunch time so its great to have his 'snack box' ready. (He started saying snack box after seeing an episode of playschool when we were in aus).

oven month cont

... and sweet short crust pastry for apple tarts (using a recipe where you melt the butter) and some soft pretzels (with sugar and cinn), and pastry for quiches
250 melted butter with warm milk (3/4 cup?) and 4 cups sr flour - added sugar and spices for sweet pastry

  • 1 and 1/2 cups (360ml) warm water (lukewarm, no need to take temperature)
  • 1 packet active dry or instant yeast (2 and 1/4 teaspoons)
  • 1 teaspoon salt
  • 1 Tablespoon (8g) granulated sugar
  • 3.75 - 4.25 cups (480-530g) all-purpose flour + more for the counter surface to knead (or mix of whole wheat flour and all-purpose flour)

m usually not in an ideal baking situation so this month is my chance! A full size oven, all the ingredients and cake tins, cold weather and aussie family ti eat....
Today i made some bran muffins with apple. Also a spiced cake ( common sense cook book) and addded some apple and used the topping from another recipe (1 tab so buttrr 3 sr flour 3 brown sugar).
Recenyly made gingerbread, grapefruit& sour cream cake, hot cross buns, pizza, garlic herb olive bread using the pizza base, peach crumble.
Also a carrot and orange cake.

salads in hot season

Due to the heat and all the ppl coming and going, mid April I find it hard to cook and eat. This year I had salad ingredients in the fridge. It was all ready to go, quick to make a yummy healthy cool meal with amost no washing up, and the toddler could eat it before I added the nuts and dressing. I bought all salad veg i really like, including ones that are harder to find/have to get at the supermarket, plus walnuts and chic peas, and wholemeal pasta. Aso had some fresh herbs chopped up and various things for dressings including sesame oil, oive oil vin, lime juice, other dried herbs, pepper etc salt etc etc, so it turned out to be a bit different each time but always with vitamins and protein.

Gingerbread in the toaster oven


Balls this size took about 10 min

flour 1 cup
quater teaspponn bi carb
half table spoon ground ginger
then add half cup firmly packed brown cane sugar 
and then about 75g butter
and then half a beaten egg (i put the other half in the pancake batter)

i put it in glad wrap in the fridge for about half hour, then cooked one lot, then another lot, that was yesterday, will probs cook the last bit today

Toaster Oven cooking!!

A whole new world of cooking Western food for one!! I always wish we had an oven, a big gas one like people have in Aust. But they are expensive, we could get a vbench top electric one like we had before, but electricy is so expenisve and it doesn't seem worth as I'm the only one who really likes Western food anyway, SOeuns happy to eat it but he doesn't get that excited so it doesnt seem worth it buy an oven at this stage.

Anyway the last tenant left behind a toaster oven, and I made pizza in it today!! And I have the ingredients for gingerbread, maybe just cooking a few at a time- wonder if the dough keeps?

Also i've done potatos, how I would in an oven, like wedges, i ate with natural yogurt and sweet chilli sauce.

toddler food

He likes oats and milk for breakfast these days, sometime raw sometimes porridge. Sometimes the milk is actually yogurt.

Raw cucumbers, omelettes and plain pasta are also easy food for me to give him/for him to eat and ones that he likes (atm).

He mostly only likes water melon and grapes (expenisve here) when it comes to fruit, altho last week he finally started eating small mandos and we've had a lot of pomello lately. Today he ate some nashi pear and apple too.

He likes eating rice with soy sauce, and rice with fish, and rice porridge if daddy gets up early! He usually eats bits of whatever we eat for lunch/dinner as well although sometimes not much. One thing he liked recently was a curry/ stir fry that was mainly faloured with peanut butter and cocnut cream.

After living out of a bag over the last month, good to finally have my own kitchen again. I made somethng today I hadn't made before and it was yummy so I'll write it down while i remember:

Chopped chicken, onion, garlic. Mixed with paprika and peppers. Fried in olive oil. Added chopped up potato (2), then eggplant (1 small), carrot (1/2) and red tomatoes (3).

Ate with rice, might try pasta next time. WOuld be nice with chick peas, broccoli, french beans, other veg and or meat.
