Cooking and eating with one hand

Since i got back from aus ive started buying packets of mixed frozen veg from the supermarket. Its a quick and easy way to make a meal with veg. The whole going to the market (as opposed to the supermarket) and chopping thing is harder with toddler and newborn. Ive been cooking meals i can eat with one hand, mostly involving the said veg with garlic onions meat and various seasoning. This one pictured is chicken and curry powder. Quick easy healthy and freezable.

hot food

After living out of a bag over the last month, good to finally have my own kitchen again. I made somethng today I hadn't made before and it was yummy so I'll write it down while i remember:

Chopped chicken, onion, garlic. Mixed with paprika and peppers. Fried in olive oil. Added chopped up potato (2), then eggplant (1 small), carrot (1/2) and red tomatoes (3).

Ate with rice, might try pasta next time. WOuld be nice with chick peas, broccoli, french beans, other veg and or meat.

rice cooker cake!!!!

making a cake by steaming... used to try it on the stove, just got the idea to use a rice cooker, first try it worked out well, i didn't use evaptorated milk, also i didn't have vanilla and i used oil instead of butter, and normal sugar, took about 45 min

Ingredients 150g of unsalted melted butter or corn oil (reduced from 175g) 175g castor sugar (reduced from 1 cup which is 225g) 1/2 can evaporated milk, about 200ml 2 eggs, lightly beaten 1 cup plain flour, about 125g 1/2 cup cocoa powder, about 60g 1/2 tsp baking powder 1/2 tsp baking soda 3/4 tsp vanilla essence
Method 1. Combine sugar, evaporated milk, vanilla essence and butter in a saucepan.
2. Stir over low heat until sugar is dissolved.
3. Add the beaten eggs into the slightly cooled evaporated milk mixture and stir till well-mixed.
4. Sift the flour, cocoa powder, baking powder and baking soda into a large mixing bowl then pour the egg mixture over the flour and stir till well-mixed. (cake batter should be runny).
grease pot, cook for an hourish, pushing down "cook" lever every 5-10 min

Vegan choc cake

1.25 cups SR flour
1 cup sugar
1/3 cup cocoa
1/2 tsp salt
1 cup water
1 tsp vanilla
1/3 cup veg oil

preheat oven 180, mix dry ingredients, add wet and mix, bake for 30 min

Frozen meals



Over the last year or so I've been making some meals and freezing them to eat later, I usually use them for weekday lunches when I get home feeling hot and tired around lunch time. One of the meals I freeze is meat and veg with a peanut sauce. I fry garlic and onion then add coconut milk. After that I add peanut butter and/or peanut powder (I make it by pounding cooked peanuts). At the end I add some other seasoning- salt, pepper, sugar, chili sauce, fish sauce etc.



Another meal is tuna and veg in a cheese sauce. The sauce is basically thicken milk with cheese and other seasoning.

Pizza (Quick mix base)


Mostly we each get excited about different food, but pizza is something we both like. The last few years we've been using this pizza base recipe that makes a big thick bready base that we like. This time Soeun doubled the ingredients so it was even thicker! We cooked it for the same amount of time and it turned out well.

Pizza Base
Mix 2 teaspoons of instant yeast with 1 teaspoon of of sugar and 3/4 cup warm water.
Mix 2 cups of flour and a pinch of salt in another bowl. Mix these 2 together, knead and roll out.
After you've put it on a tray and put the toppings on, cook it for about 20 min on 200C. That's what works in our oven anyway.
